Ayam Tempra

Entry kali nie nak cerita pasal masakan aku 'Ayam Tempra'. Masakan nie berasal dari nyonya Melaka, dan memandangkan mak mertua aku dari keturunan tu jadi memang selalu dia masak ayam kalau kami balik melaka. Jadi aku nak kongsi resepinya.. tapi resepi nie aku tukar sedikit mengikut citarasa aku
Bahan2
2 biji bawang besar di potong dadu
2 ulas bawang putih di ketuk
1/2 inci halia
300 gm ayam di potong dadu
2 biji cili merah di potong
1 sudu perahan limau kasturi
3 sudu kicap cair
1 sudu kicap pekat
3 sudu air
1 biji tomato
Garam, gula secukup rasa
Cara2
1) Goreng bawang besar, bawang putih dan halia sampai ada bau keluar.
2) Masukkan ayam dan masak selama 10 minit dengan api perlahan. Kacau sekali sekala supaya ayam masak keseluruhannya.
3) Masukkan perahan limau kasturi, kicap cair dan kicap pekat.
4) Masukkan  cili merah dan tomato. (Dalam gambar ni aku masukkan cili hijau juga sebab cili merah dah habis)
5) Kacau sebentar, kemudian masukkan garam dan gula secukup rasa.

Chicken curry with noxxa cooker

This cooker is very famous among housewives. It claimed it can speed up cooking process and very helpful for the working mum like me. My ex-schoolmate group has been talking a lot of this cooker and they managed to influence me to buy it. My husband never agree, he claimed the cooker will have same fate as my breadmaker, which has been idling sitting inside the box for quite some time. Secretly I bought that, through installment plan though. I dont want to make it so obvious so, after 3 month I would get that cooker after our disagreement. That should be fine, I guess 😆. So the three months has passed, and I got the 'noxxa pressure cooker'now. Actually I received that 2 weeks ago, I wasn't have opportunity to try. So this saturday, I am quite free and it perfect time to try this new cooker.

So I would cook curry chicken. First and foremost, I have to do some procedure before using the cooker. I share the procedure in the picture below. I was a bit worried when there was quite loud sound and lots of steam came out. Luckily no explosion, fire and everything turn out well. Just want to share the chicken curry recipe. It taste good, look at the picture. This recipe shall be good for 4 ppl serving.

Ingridients
(Stir fry)
5 tbsp vegetable oil
2 cloves chopped small onion
2 pc chopped garlic
3 cm chopped ginger
Curry leaves
10 cm cinnamon stick
2 star anise (bunga lawang)
4 cardamom (buah pelaga)
1 pack curry powder ( I use Babas
(High pressure)
1 cup of chicken broth
1/2 kg chicken
2 chopped potato
1 cup of Coconut milk (santan)
2 tsp coconut paste (kerisik)
Asam keping (not sure what they called in English)

Procedure
1) Set to stir-fry and put the oil. Wait 1 minute before put the onion, garlic, ginger, curry leaves and all the herbs. Stir and wait you can smell the curry aroma
2) Put the curry paste. I normally will prepare the curry paste with water. Wait until you can see the curry paste and the ingridient well blend.
3) Insert the chicken broth, potato and chicken. Stir fo a while
4) Insert the coconut milk ,coconut paste and asam keping. Put some salt for the taste.
5) Off the stir-fry function. Change to high pressure for 10 minutes. Dont forget to turn the setting to pressure. After the beep sound, change to steam mode.

Ayam masak rempah 4 sekawan.

It's been a while that i did't go to my favorite nasi kandar sharif. I love their chicken spice. Everytime I went, i would make i have that chicken on my plate. Last time when i was not married, i always eat there. but now with the kid, it's difficult. The place is not so convinient for family.

So during this morning breakfast, my friends were talking about food and recipe. Then it reminds me of the chicken spice at that warung. Why dont i try to cook it tonight?? I browse a few recipe from internet. I found one which was quite convincing and i decided to give it a try. Oh it taste good! I recommend it. I decided to share the recipe here. The one that i got does not mentioned qty, just what to put. I come out with my own version with the amount that we should put.

Bahan2
1/2 ekor ayam di potong kecil
2 tsp jintan manis ( goreng tanpa minyak)
1 1/2 tsp jintan putih ( goreng tanpa minyak)
3 sudu cili kering kisar
3 biji bawang merah besar
5 ulas bawang putih
1 in halia
1 bungkus serbuk rempah daging
2 serai (di titik)
daun kunyit
bunga lawang, bunga cengkih, kulit kayu manis, buah pelaga
2 tbs kicap soya
2 keping asam keping
garam secukup rasa

cara2
1) Goreng ayam separuh masak. Asingkan.
2) Kisar bawang merah, bawang putih, halia dan jintan.
3) Tumiskan bahan kisar diatas.
4) Setelah naik bau, masukkan cili kisar. Tumis dgn api perlahan.
5) Masukkan serbuk kari. Kacau hingga sebati.
6) Masukkan ayam. Tunggu dan kacau sekali sekala.
7) Masukkan rempah ratus tadi.
8) Masukkan serai, daun kunyit dan kicap. Kacau.
9) Garam secukup rasa, masak hingga kering.

Hasilnya macam kat bawah nie, sedap :)

Nasi Ayam. @ Chicken Rice

Last weekend, I tried cooked nasi ayam. I did cooked this before at my hometown with other family member, but never actually tried to cook alone. The recipe is still on my mind, but I do hope I dont miss the essential ingridient or else my chicken rice will turn into something else.

Satay Celup??

Pernah dengar tak nama satay celup? Aku pun tak pernah rasa tapi husband selalu cerita pasal makanan nie sehingga aku tertanya dan teringin nak rasa betapa sedapnyer satay celup nie. Menurut hubby, makanan nie sangat famous di Melaka di kalangan orang-orang Cina. Tapi kebiasaannya orang China akan letak non-halal produk dalam makanan nie. Itu sebab orang Islam tak makan.

Awal plan, nak masak nie semasa balik ke Melaka. Hubby dah berangan nak makan besar dgn family dia, tapi nasib tak mengizinkan, Luffy demam pulak pada hari nak balik tu. Jadi plan nak masak satay celup di Melaka terpaksa di batalkan.

2 minggu lepas tu harijadi aku, mak aku pulak nak buat kenduri sebab nak sambut puasa katanya, walhalnyer puasa lagi sebulan :). Jadi husband kata dia nak masak satay celup masa kenduri aku tu sebab masa tu ramai orang, so baru meriah. Aku OK jer :) Memang sedap, sorrylah tak dapat share resepi sebab hubby yang masak... aku tolong makan jer. Nie ader beberapa gambar utk di kongsi berkenaan dgn satay celup nie. Tapi memang nice , yummilicous...

Murtabak Recipe

This weekend I want to try something new. I have Pizza on my mind and after a few thought, i changed my plan to try cook murtabak. I love murtabak and these days it's quite to get a tasty murtabak at night market stall. After browse few webpages, I found this recipe which I think quite reliable and I want to give a try. Bahan2:

• 10 ounce Tepung gandum
• 1/2 cawan minyak sapi/ Ghee Blend
• 2-3 cili api hijau segar
• 1 biji bawang besar, di hiris.
• 1 biji telur untuk 1 keping doh
• 1/2 cawan air
• Secubit Garam

Inti Murtabak:
• 1 lb Ground lamb or beef
• 2 tbsp Ghee
• 1 Onion, finely chopped
• 1 tbsp Fresh ginger, finely minced
• 2-1/2 tbsp Meat curry powder
• 2 tbsp Cilantro, finely chopped
• 2 tbsp Fresh mint, finely chopped

How to make Murtabak:
• To Prepare Meat Filling:
• Take a wok or saucepan and heat ghee.
• Add chopped onion, ginger, and meat curry powder,
• Stir-fry for about 1 to2 minutes, add ground meat.
• Stir with spatula and break up meat so that there will be no clumps, cook until well browned.
• Add cilantro and mint, stir to mix well with meat, promptly remove from the flame.
• Let it cool fully.

To Prepare Murtabak:
• Sieve flour and salt into a bowl.
• Mix ghee, add water gradually and knead till the dough is smooth.
• Let the dough rest for about 2 to 3 hrs to soften.
• Make small balls from the dough, oil the work top with ghee and work each ball into a very thin sheet.
• First flatten with oiled palms, now thin it again by pulling the edges.
• Sprinkle the dough sheet with 1 tsp ghee and fold in edges, shape it into a square.
• Now sprinkle a little flour and roll out into a paper-thin rectangular sheet.
• Preheat the griddle or pan, grease it well with ghee.
• Break one egg in the middle of the rectangular sheet and carefully spread the egg over the middle portion of it.
• Sprinkle some chopped onions and finely sliced green Serrano.
• Spoon about 2 tbsp curried meat filling evenly and fold in the four into a fine square.
• Quickly lift the murtabak, using both hands, onto a preheated griddle.
• Cook for about 2 to 3 minutess until golden brown.
• Lift Murtabak up, grease the griddle with ghee, and cook the other side until brown.
• Cut it into 2 or 4 pieces.
• Serve hot or cold.

My chocolate cake :)

Thanks to K. Azie, the Engineering Operator at my department for willing to share her chocolate cake recipe. I've tried few chocolate cake recipe from internet, but none taste as good as this one. I brought back the cake to my hometown during my cousin's wedding. Alhamdullilah..Habis, and lots of complement from my relatives..yummilicious!!! So I want to share the recipe here.

Chocolate Cake Recipe

Ingredient
----------
250g butter
2 cups castor sugar
5 eggs
2 cup self rising flour
1 cup cocoa powder
1 cup of cold water ** Mix cocoa powder with cold water, kacau utk elakkan ketul2.
a pinch of salt.

Method
------
1. Mixed butter and sugar. Stir the mixture.
2. Add egg to mixture one by one. Then add the salt.
3. Add cocoa powder + cold water mixture
4. Stir all until they are well-mixed.
5. Preheat the oven 160'C and bake the cake for 45 min. (The original recipe is bake for 130'C, but when I use this, my cake is soggy on top, so I changed to this setting. I think it depends on what is the optimize temperature for you oven for baking a cake :))

Topping
-------
1 cup of castor sugar
3/4 cup cocoa powder
50 gm butter
1 can Evaporated milk

Method
------
1) Mix all the ingredient above in the pot. Under moderate fire, stir until the mixture become richer and creamier.

So inilah gambar2 kek coklat ku, memang huduh, tapi sedap. Next time akan ku cuba lagi dan akan ku hiaskan cantik2. Check this out.

Lamb Chop

Its Saturday!! Of the seven days in a week, I love Saturday the most. It's because, I'm not working and I can do lots of thing until midnight with not worrying about getting tired, since I still have Sunday to rest. Normally, I would try some new cooking during my off day. For this time, I'm cooking lamb chop.

I got this recipe from a website which mentioned that "This recipe is a courtesy of Rick's How to Cook Lamb site. I was in hurry to avoid the Friday bad traffic that I didn't copy the web address. The recipe is quite simple and I want to give it a shot.

Here is the recipe; I modified some though :)

Chinese-style Black Pepper Lamb Chop

Ingredient
500 gm Lamb chop (I bought nicely chopped lamb from Tesco)
1 clove of Onion (I used Bawang Benggala)
Potato (This is optional)

- To be grind and blend
1 teaspoon of black pepper
3 tablespoon of oyster sauce (You can estimate this, some may prefer more )
5 pcs garlic
daun sup (i'm not sure what they called in english, actually you can use rosemary, but I couldn't find it here)
Salt & Sugar

Procedure
1. Mix the ingredient to be grind and blend.
2. Marinate the lamb chop. Spread the ingredient evenly and leave to marinate about an hour. The longer the better :).
3. Chop the onion into large slices. Chop the potato as well.
4. Heat the oven to 230'c. You can either grill or roast. For me, I used my conventional microwave which come with the short key to roast lamb pieces.
5. Arrange the potato, onion slices and the lamb on the plate/ foil.
6. Roast in the oven for about 8 minutes and flip to otherside and roast again for another 8 minutes.
7. Ready to serve.


This is how my lamb chop being roasted in the oven together with onion sliced and potato.



Ready to serve.. I have salad as my side dishes. :)

Ketam Nipah.

Have you ever tried Ketam Nipah??
I were once tried it in Singapore with my Thai's friend. During that time, I considered myself "darurat" and in the "was-was" state. Certain people from different areas called it Ketam Batu. It is black color and it turn to red color once you cooked it. I think ate few times at the hotel,but I just don't bother of the halal/haram status because they serve in public places and a lot of moslem ate. But when I small, I was told that there are types of crab that you cannot eat, which is the one that live not in water.
So this is funny story happened to me and hubby. One day, my husband bought ketam nipah on our way back from Pantai Remis to Penang. He wanted to call his brother to dine with us. He asked me to cook the crab, and once I look at the crab, it was still alive. Then I was in the uncertainty state of the halal/haram status. I asked my cousin about it, and from her info, Ketam Batu and Ketam Nipah are the same type of crab and they are not halal. Urgh..Back to the story, I excused myself saying that I'm not feeling well. My husband finished the cooking part. During the dinner time, hubby approach me for the dinner. I excused myself again saying that I am not feeling well and I am not hungry. Actually my stomach was rambling. I ask hubby and BIL proceed with the dinner. Then I fall asleep with empty stomach.
So after my BIL went back, which was about 12 midnight, hubby woke me up. Then I got chance to raise my concern to my husband. But my husband was frowning,"I bought that from that pakcik. If its not halal, why would that pakcik sell?". He got his point, but I answer,"Maybe that pakcik sell those crab for non-muslim only and he think u are one". I got my point too, Hehe... "Noncern! I saw on Majalah3, got Malay ppl ate also. If you dont trust me, check on the internet."



Hehehe, actually those crab are safe or "halal" for muslim. Sorry Hubby!! And after that it become one of my favorite seafood. Now, most of the balik kampung time, we will look for those ketam from the same pakcik.
